Has anyone been able to have an insurance on a 601XLB while Sport's pilot student (before completing the license)?

Has the 601 completed the 40 hour phase one testing period?
If no, is it your plan to fly off the hours in the 601 while a student pilot, training in another aircraft?

The 601 has almost 300hrs. I'm currently flying a Cessna 162 and I was hoping to complete my Sports on the Zenith...

Since you own the Zenith there is no legal impediment to using it to complete your license. This assumes you have a CFI willing to instruct in it.
You can expect to pay a premium for insurance because of your low hours. It shouldn't matter that you are a student. I would do a search for "insurance" on this site as the subject has been discussed at length previously.
