I'm in the Dallas Texas area.  Beyond what Roger and Zenith will extend as a courtesy at Mexico MO, how/when/where can I get dual in a CH750?

I am a Private Pilot, and of course that means I can operate as a Sport Pilot as well.

Gus Warren used to advertise transition training for the CH750.  Give him a call and check it out.

How about Buzz Air in Carson, Nevada?

Great idea, and I was going to get some dual through them.

Unfortunately, they crashed their 750 on Oct 8.  Per the NTSB, a "pilot under instruction" and an instructor were practicing slow flight at 200 feet when a high sink rate developed.  Power was added, but was not enough.  More power was added and then the instructor and student began to issue conflicting commands into the main control stick on the pitch axis.  The result was a touch down, dig in of the nosewheel, resulting in a flip of the aircraft.  Both persons on board walked away (literally and figuratively).

This is a huge negative for Buzzair and the people involved... but at the same time, the lack of injury from a full on crash and flip is a testimony to the rugged design of the 750.  Makes me more comfortable!!

Long thread on this here

Anyway, Buzzair no longer an option, at least for the moment.

Bummer.

Thanks Danal, I didn't know about the accident.

Contacted Buzz Air and they told me that it will be flying again in December

I am planning to have flight lessons there around February - March next year

Practicing slow flight at 200 feet???

That was my first thought -- these planes are meant for "low and slow" but that would appear to be getting a little too literal for my comfort.

One option, try Buzz Air  in Carson City, Nevada - they have a 750 for instruction. If I have the name wrong, Doug at QSP (Quality Sport Planes) can get you the info.
