I had a 701 with the Zenair amphibs and a 701 with Puddlejumpers. When it comes to the float, the puddlejumpers were good. No leaks obviously and good water handling. The plane did not loose as much speed as it did with the Zenair trycycle floats. When it comes to the amphib part, then the Zenair was way better. Tires, brakes, and the raising and lowering were nice. The puddle jumper amphib gear was cables and it was a pain to get working correct and never felt great. The brakes on the PJs were not near as good either. The PJ owner is easy to work with and was always helpful. Hope this input helps.
No Bob, the wings are different internally to distribute the loads with just one strut. The Cruzer uses a single strut but the STOL must have both struts.

While most of your questions should be addressed by Zenith, I will do my best to answer them.
The quick build kits do meet the 51% rule since you will still need to complete at least some of each component part, and nothing is completely closed up by us. If you are not concerned about a strict time schedule we can save you a significant amount off of the price of the quick build by building it up here. Nearly all of the CH750 is match drilled but keep in mind that there is still some fabrication required, and that there are some internal parts that must be fitted by the builder, the firewall is one example.
I know people who like to skip step drilling whenever they can but I like to step drill everything as it is easier to keep things in alignment.
Yes, there are a couple of nice places to setup a 5th wheel. There is a city park on a nice lake with complete hook ups for $8 per night but they have a 2 week limit but there are other parks with monthly rates of around $300 for complete hook up.
I believe that Zenith offers a complete firewall forward kit for the Jabiru 3300 as they have one in their demo plane.
