What's the approved solution for connecting the trim tab servo wires together? Small individual connectors or make a plastic connector

Check out Aircraft Spruce Heat-Shrink Butt Splices. You can double crimp each end using pliers and then use the self-sealing tubing to make it water tight. I have them all over my plane. The reds are good down to 26 gauge. 

Any reason not to simply solder them and put regular heat shrink tubing over?

Those are environmental seals and do a better job of keeping out moisture (think corrosion) than plain heat shrink. Having said that there is marine heat shrink which probably will do a good job as well ;)
I soldered mine but the wires are so fine they are a PITA to do in the plane.

I only found out about those solder sleeves at the end of my build. Wish I had known of them earlier. It would have saved me a lot of aggravation.
