Does anyone know what model carburettor is installed on Jabiru (specifically 3300)?
I found nothing in the documentation... odd...

That's certainly the correct model, but obviously there are many different versions!
If you're looking for a manual or parts, I use Bing Agency International, the US and Canadian distributor for Bing (they sell direct to the public). They could probably ensure you're getting the correct manual.

(I am trying to determine if and where I can install a temperature probe on the carb)
If you get no responses here, I'm pretty sure someone on the JabCamit Yahoo Group has installed a temp probe. If not already a member, I'd suggest you join that group and see if someone who has done that will respond.
