I need to move my EGT probes due to cowling interference. Other than welding the holes closed, has anyone had luck with other methods? The holes will be under the hose clamp that is holding the probe in the new location. Has anyone used a stainless rivet? Thanks

Yes.  Take a flathead SS screw, cut it very short so it doesn't extend into the inside of the pipe, and use the SS clamp to hold it in place.  The only SS rivets I'm aware of are pulled rivets.  A pulled rivet will extend into the inside of the pipe and affect exhaust flow.  This may or may not be a problem.

Not an answer to your question,  I realize,  but the downside to anything other than welding could be catastrophic. 

If the solution should fail, with the proximity to the cowl,  you will have a fire. If it happens in the air....
